Whole 30 Recipe Roundup
/Time for the January 2018 Whole 30 recipe roundup! This was my third complete round of a Whole 30, and each time I find phenomenal new recipes and new amazing people to follow on Instagram. I actually ended up doing a Whole 45 this round with about 2 weeks of reintroduction. During this time I came across some fantastic recipes and blogs for recipe inspiration. I've posted 10 of my fave recipes below.
Not everyone is familiar with the Whole 30. So, just a heads up that ALL of these recipes are paleo-friendly and they are free from the following ingredients:
No grains (including gluten)
No Legumes (including soy)
No Added Sugars (not even honey)
No Dairy
The great thing about these recipes is that they taste amazing and can also be used by anyone who is simply trying to clean up their diet. Just an FYI: I use riced cauliflower as my rice substitute (I love Trader Joe's brand the best!). I use zucchini spirals to replace noodles (you can buy these at most stores now, but I just use this spiralizer and make them myself). I also use spaghetti squash as a spaghetti replacement and also in many casseroles.

Whole 30 Cashew Chicken
Chinese food takeout fakeout! My husband and I love this recipe from A Saucy Kitchen! My take on this recipe--I find that you do not need to add in arrowroot flour (optionally) at the end to help thicken the sauce. I find that it thickens fine without that step.
Paleo Pizza Casserole
PaleOMG nailed it with this one! My take on this recipe: It calls for Italian Sausage. I've used pork and I've used chicken sausage. I've also used grassfed ground beef and just seasoned the beef up with Italian Seasonings. The sausage (pork or chicken) does work the best for flavor. If you are making this recipe for the first time, I’d use sausage just so you get an idea of flavors before experimenting. Also, I sometimes throw some sliced mushrooms (and even spinach) into the sauce while the sauce is simmering to add extra veggies. We usually put sliced jalapenos and/or Whole 30 compliant pepperonis on top of the casserole before we pop it in the oven. You can top it with whatever you like as a pizza topping.
Prosciutto-Wrapped Mini Frittata Muffins
I don't really deviate from this one because Nom Nom Paleo is a genius. I did once try to put muffin papers down first and that just made them soggy. Oops! Best to just follow her instructions because she has got it down!
Buffalo Chicken Chowder
We love this one! Especially great for game day! Just Jessie B packed SO much amazing flavor into this, and it is fantastic the way it is, but I do add more chicken than she recommends because my husband fishes out all the chicken from the main pot for protein--lol. I do approximately 2lbs instead of 1 1/2lbs chicken. I also add a couple extra potatoes. I recommend trying it her way the first time and then tweak if you need it.
Buffalo Chicken Casserole
Another game day must and another PaleOMG fantastic casserole. She mentions butter or ghee as an ingredient. Don’t forget that if you are on a Whole 30 you need to use ghee (no butter allowed). Also, sometimes with this one I add 1/4 cup less Frank's Hot Sauce because the full amount is a bit strong for me, but my husband likes it 100% as written.
Chicken Pot Pie Spaghetti Squash Casserole
I love the official description of this from Pretend It's a Donut's Blog 'if Thanksgiving stuffing and chicken pot pie got together and had a casserole baby.' Yes and Yes!!
Whole 30 Chicken Alfredo
This recipe kind of blew my mind the first time I tried it. Just Jessie B did it again-- Serious fettuccine deliciousness! Really hard to believe that it does not have dairy. I find using the coconut milk from Thai Kitchen works the best. Some of the other brands I tried did tend to give it a ‘coconut’ flavor, but the Thai Kitchen one did not.

Full disclosure. I'm terrible at cooking salmon, but with this recipe you can't go wrong--even I could handle it and it came out delicious.
Roasted Bacon and Brussles
In my opinion Nom Nom Paleo can do no wrong and this recipe is proof. SO delicious. Of course, be sure to use sugar-free bacon, but this recipe is all I dreamed it would be. The other thing in the picture is her Great Balls Of Fire--not on her blog, but on her app if you're interested. They were also a big win.
Whole 30 Chinese Orange Chicken
Again, Chinese Food takeout fakeout. Super good!! This one is from The Defined Dish and it's extremely tasty.
